Aperture Cellars, the renowned winery in Sonoma County, is proud to announce an exciting new relationship with United Airlines, marking the debut of Aperture’s acclaimed Cabernet Sauvignon aboard United’s Polaris cabins starting on October 1, 2025.
This collaboration celebrates a shared commitment to excellence, a global perspective, and the pursuit of extraordinary experiences.
The story behind this relationship is deeply personal. Jesse Katz, founder & first- generation winemaker of Aperture Cellars, has enjoyed a lifelong connection to travel, shaped by his father, celebrated photographer Andy Katz, whose career is devoted to capturing the world, including some of the most storied wineries, through travel photography.
Jesse cultivated an international perspective from an early age on wine and culture through extensive travels to more than 80 countries with his father. From these trips he gained a rich education in world-class terroir and the artistry of winemaking from some of the most celebrated châteaux and wineries across the globe. United played a vital role in making these experiences possible, connecting him to diverse cultures, landscapes, and traditions that continue to shape and inspire his work today.

Today, Jesse is recognized as one of the world’s most accomplished winemakers and continues to journey with United, bringing Aperture wines to audiences worldwide through luxury experiences that showcase the distinction of Sonoma County wines.
“Working with United Airlines is a true privilege. United has been instrumental in shaping my life’s journey, inspiring my passion for winemaking and igniting my love for travel. To now share our flagship Cabernet Sauvignon with Polaris customers brings that story full circle —aligning the elevated standards of world-class wine with the refined hospitality of global travel, and celebrating the connections and lifelong memories they inspire,” said Jesse Katz, Founder and Winemaker of Aperture Cellars.
Aperture champions a range of stunning wines dedicated to expressing the region’s potential and longevity for producing world-class Bordeaux varietals in Sonoma County, California. Focusing on Cabernet fruit from Aperture’s mineral-rich, volcanic soil sites nestled on the hillside slopes in the Alexander Valley, the Aperture Cabernet Sauvignon is uniquely crafted with delicate inclusions of Petit Verdot and Malbec, and a small hint of Merlot showcasing intense black fruits enriched with lengthy velvety tannins. The iconic wine label features an original Andy Katz photograph demonstrating every Aperture wine as an expression of art inside and out.
